They are not set automatically to SU 7. They just aren't deleted when you delete SketchUp 7 (most programs don't delete their settings, for precisely this reason, upgrading). You will just need to manually change them, it's what the browse and delete buttons are for in that screen shot you showed. ...

I tried to delete Twilight folder and Tw. ruby in SU8 plugin folder and reinstall it using most up-to-date installer.
It seems that all paths under Twilight/Options/Directories and Files are set automatically to SU 7 ...
